We should see that we should avoid coconut oil which 86% of it is saturated fatty acid.38% of pork oil is saturated fatty acid so it contains less saturated fatty acid than palm oil which 48% of it is saturated fatty acid.

Good vegetable oil should not contain saturated fatty acid more than 20%, therefore, vegetable oil we should use are peanut oil, rice bran oil, sesame oil, soybean oil, olive oil, corn oil, sunflower oil and safflower oil.

- We should not consume cholesterol more than 300 mg. in each day.

To avoid high fat in our blood, we must not consume more than 300 mg. of cholesterol per day.

How?

It is easy, look out for egg yolk, animal innards, pork ribs, etc. Last but not least, no animal brains.

As for egg of 70 grams in weight, would contain 350 mg. of cholesterol already, so we cannot take any meat on that day. To keep normal blood cholesterol avoids eating egg.

Take egg, for instance, which has high cholesterol, if a senior person eats it everyday, they will have high cholesterol. Instead, vegetables, fish and food with fiber must be considered.

This can apply with meat, poultry and fish. If we eat not more than 100 grams of meat each day we will get limited cholesterol which is save for our health. If we eat one chicken a day [more than 500 grams.] we will get more than 400 grams of cholesterol already.

Once again, traditional fresh Thai cuisine is the answer.

- Oil should be used only once.

The disadvantage of oil that contain a great deal of unsaturated fatty acid is that when it is heated, some chemical reactions between unsaturated fatty acid and oxygen will occur, oxygen atoms will be added to the fatty acid in the positions of double bond, this reaction will generated free radicals. During the industrial manufacturing process, vegetable oil has to pass the high-temperature process; therefore, this vegetable oil must have some free radicals. When this oil is heated during cooking, free radicals will be increased. If we use the used vegetable oil over and over again, we will innocently get free radicals which are harmful to our bodies. Free radicals are cause of deterioration of our bodies and degenerative diseases. Therefore, should be used only once.

In snack and instant noodle industrial manufacturing processes which frying process is included, there are some methods used to control amount of free radicals not to reach the level that can cause hazard to health. When quantity of free radicals is higher than standard level, that oil will be removed but some merchants may buy this oil from factory at cheap price then pass it through filtering process before selling it to food sellers.

Be aware of those practices.
